Ingredients

  • 1 teaspoon cornstarch, or more as needed
  • 1/2 cup low-sodium beef broth
  • 1/2 cup low-sodium soy sauce
  • 2 teaspoons rice vinegar
  • 2 teaspoons wine vinegar
  • 2 teaspoons red pepper flakes
  • 1 teaspoon white sugar
  • 1 clove garlic, minced
  • 1/4 teaspoon ground ginger
  • 2 tablespoons vegetable oil, or as needed
  • 1/2 pound asparagus, cut into 1-inch pieces
  • 1/2 onion, chopped, or more to taste
  • 2 cloves garlic, minced
  • 4 heads baby bok choy
  • 1 zucchini, chopped
  • 4 teaspoons toasted sesame seeds

Combine water and cornstarch in a saucepan to achieve the perfect consistency. Gradually add beef broth, soy sauce, rice vinegar, wine vinegar, red pepper flakes, sugar, garlic, and ginger to the mixture. Heat the saucepan over high heat until it reaches a boil, then decrease the temperature and let it simmer until the sauce has thickened to your liking, approximately 10-15 minutes.

Meanwhile, heat a generous amount of oil in a large wok or frying pan over medium-high heat. Add the asparagus, onion, and garlic to the pan and cook until they are slightly tender, around 5 minutes. Next, add the bok choy and zucchini to the pan and continue cooking until they retain a slight crispiness, approximately 5 minutes more. Finally, pour the prepared sauce into the pan with the vegetables and sprinkle a generous amount of sesame seeds on top.
