Bobby's Smoked Roast
Ingredients
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon Montreal steak seasoning
  • 1 (3 pound) chuck roast, or more to taste
  • 1/2 cup barbeque sauce
  • 1/4 cup brown sugar
Instructions
1
Preheat your smoker according to the manufacturer's guidelines, setting it to a temperature of 275 degrees Fahrenheit (or 135 degrees Celsius). Follow the manufacturer's instructions for preheating the smoker to ensure it reaches the correct temperature.
2
Next, mix together salt, black pepper, garlic powder, and steak seasoning in a bowl. Make sure to apply the seasoning evenly over the roast.
3
Place the seasoned roast in a baking pan and position it in the smoker. Allow the roast to cook until it reaches an internal temperature of 165 degrees Fahrenheit (or 74 degrees Celsius). This process should take around 4 to 4 1/2 hours.
4
Once the roast has reached the desired temperature, wrap it in aluminum foil and continue smoking until it reaches an internal temperature of 195 degrees Fahrenheit (or 90 degrees Celsius). This additional step should take approximately 1 hour.
5
Remove the roast from the smoker and let it rest for 20 minutes. Leave the smoker on to maintain a consistent temperature.
6
Cut the roast into smaller cubes and return it to the baking dish. Mix in barbecue sauce and brown sugar, making sure everything is well-coated.
7
Finally, continue smoking the roast for an additional 1 1/2 to 2 hours.
