Ingredients
- 1 large yellow onion, chopped
- 1/2 pound thick-cut bacon, chopped
- 1 1/2 pounds ground beef
- 3 cloves garlic, chopped
- 1 tablespoon ground cumin
- 2 cups water
- 3 (15.5 ounce) cans kidney beans, rinsed and drained
- 1 (14.5 ounce) can fire-roasted diced tomatoes
- 1/4 cup chili powder
- 1 teaspoon liquid smoke flavoring
- salt and ground black pepper to taste
- 1 dash hot pepper sauce (such as Tabasco®), or to taste
Instructions
1
Heat a large cooking vessel over an intermediate temperature until the onion becomes transparent, approximately 5 minutes.
2
Combine the cooked onion and crispy bacon in a substantial container over an intermediate heat until the onion is no longer opaque, about 5 minutes.
3
Add ground meat, minced garlic, and a pinch of cumin; cook and stir constantly until the meat is uniformly browned, 7 to 10 minutes.
4
Introduce water, kidney beans, diced tomatoes, a sprinkle of chili powder, a dash of liquid smoke, salt, black pepper, and a few dashes of hot pepper sauce; bring the mixture to a gentle boil and cook until it reaches the desired consistency, about 1 hour.
5
Remove any excess fat if desired.
