Blueberry Waffles with Quick Sauce
Ingredients
  • 1 2/3 cups milk
  • 3 large eggs
  • 2 cups all-purpose flour
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup melted butter
  • 2/3 cup blueberries
  • 1 1/2 cups blueberries
  • 3 T honey
  • 1/2 c orange juice
  • 1 T cornstarch
Instructions
1
Prepare the batter: In a medium-sized container, combine milk and egg yolks. Use a whisking motion to blend these two ingredients together thoroughly. Add flour, baking powder, and salt into the mixture, stirring until well combined. Incorporate melted butter into the blend, allowing it to rest for approximately 30 minutes.
2
Preheat and prepare the waffle iron: Lightly coat a waffle iron with a non-stick substance, following the manufacturer's guidelines for temperature and preparation.
3
Whip egg whites in a suitable bowl until stiff peaks form. Combine the whipped eggs with the batter, incorporating blueberries into the mixture.
4
Cook waffles in batches: Scoop small portions of the batter onto the preheated waffle iron, working in batches to ensure even cooking. Cook each waffle until it reaches a golden brown color and the iron ceases to produce steam, taking around 4-6 minutes.
5
Prepare the sauce: Combine blueberries, 1/4 cup of orange juice, and honey in a medium-sized saucepan over medium heat. Bring the mixture to a boil.
6
Create a thickened sauce: Mix remaining 1/4 cup of orange juice with cornstarch in a small bowl. Stir this mixture into the blueberry sauce, cooking constantly until it thickens. Serve warm over waffles.
