Blueberry Surprise Bottom Cake
Ingredients
  • 1 (15.25 ounce) package white cake mix (such as Pillsbury® Classic White)
  • 1 cup water
  • 3 eggs
  • 1/2 cup vegetable oil
  • 4 cups fresh blueberries
  • 1 cup white sugar
  • 1 (3 ounce) package strawberry-flavored gelatin
  • 3 cups miniature marshmallows
  • 2 cups frozen whipped topping (such as Cool Whip®)
Instructions
1
Firstly, preheat your oven to a moderate temperature of 350 degrees F (175 degrees C). Next, take some butter or cooking spray and lightly cover a 9x13-inch baking dish to prevent the cake from sticking.
2
Now, in a large mixing container, combine the dry ingredients, water, eggs, and vegetable oil. Using an electric mixer on a low setting, gently blend the mixture until it becomes moist and well combined. After that, increase the mixer speed to a medium level and continue blending until the mixture is smooth and even, taking around 2 minutes.
3
Subsequently, spread a layer of blueberries at the bottom of your prepared baking dish. On top of the blueberries, create a layer with sugar, gelatin powder, and marshmallows. Finally, pour the cake batter evenly over the marshmallow layer; make sure to smooth out the top surface.
4
Place your baking dish in a preheated oven and bake until a toothpick inserted into the center comes out clean, which should take approximately 50 to 55 minutes. Remove your baking dish from the oven and let it cool down in the pan for about 30 minutes.
5
Once your cake has cooled, spread a layer of whipped topping over it and serve immediately.
