- 1/2 cup white sugar
- 1 teaspoon ground cinnamon
- 1 egg, beaten
- 1/4 cup turbinado sugar (such as Sugar in the Raw®)

Preheat your oven to a high temperature of 425 degrees Fahrenheit or 220 degrees Celsius.

Spread the pie crust pastry on a flat surface and use a round cutter with a diameter of 5 inches to cut out circles from the dough.

Place one tablespoon of blueberries in the center of each circle; sprinkle a pinch, approximately 1/4 teaspoon, of sugar over the blueberries.

Add a light dusting of cinnamon to the blueberries for extra flavor.

Fold the dough over the filling and press the edges together with a fork to seal them securely.

Arrange the hand pies on a baking sheet in a single layer.
