Blueberry Cream Cake
Ingredients
  • 1 1/2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 cup butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 4 cups blueberries
  • 2 cups sour cream
  • 1/2 cup white sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
Instructions
1
Preheat your oven to 375 degrees Fahrenheit, or 190 degrees Celsius.
2
Next, take some cooking spray and lightly grease a 9 inch round cake pan that is designed to release easily.
3
In a relatively small bowl, combine the flour, half a cup of granulated sugar, and baking powder. Using your fingers or a pastry blender, work the butter into the dry ingredients until you have a mixture that looks like coarse crumbs.
4
Then, add in the egg and an additional teaspoon of vanilla extract. Mix everything together until it forms a cohesive mass.
5
Gently press the mixture into the bottom of the prepared cake pan.
6
Spread a layer of blueberries over the top of the batter.
7
In another small bowl, whisk together the sour cream, half a cup of granulated sugar, egg yolks, and an additional teaspoon of vanilla extract until you have a smooth mixture.
8
Pour the sour cream mixture over the blueberries in the cake pan.
9
Bake your cake for 60 to 70 minutes, or until it is lightly browned on top.
10
Once the cake has finished baking, let it cool completely before removing it from the oven.
11
Next, insert a knife around the edge of the cake pan to loosen the sides.
12
Carefully lift off the outer ring of the cake pan, and then cut the cake into wedges to serve.
