Ingredients
- 1 teaspoon butter
- 1 (10 ounce) package frozen blueberries
- 9 tablespoons all-purpose flour
- 1 pinch baking powder
- 1 pinch salt
- 1 cup buttermilk
- 3 eggs
- 6 tablespoons white sugar
- 1 teaspoon grated orange zest
- 1 teaspoon vanilla extract
- 1 tablespoon brown sugar, or more to taste
Instructions
1
Preheat your oven to a medium-high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric).
2
Rub a baking dish with a generous amount of melted butter to prevent it from sticking.
3
Take a handful of blueberries and gently place them in the prepared baking dish, spreading them out evenly.
4
In a small bowl, combine three ingredients: flour, baking powder, and salt.
5
Mix together buttermilk, eggs, and sugar in a large bowl using an electric mixer.
6
Gradually add the flour mixture to the wet ingredients, stirring until a smooth batter forms.
7
Mix in a teaspoon of vanilla extract and the grated zest of an orange, taking care not to crush the berries.
8
Carefully pour the batter over the blueberries in the baking dish, making sure to cover them evenly.
9
Place the baking dish in a preheated oven and bake until the mixture is set, approximately 30 minutes.
10
Once the top layer of the batter has firmed up, sprinkle a thin layer of brown sugar over it.
11
Return the baking dish to the oven and bake for an additional 10-15 minutes, or until the sugar is lightly caramelized.
12
Serve the warm or chilled blueberry cake as desired.
