- 2 teaspoons cracked black pepper
- 2 teaspoons coarse salt
- 1 tablespoon unsalted butter

Prepare the venison steaks by sprinkling a generous amount of black pepper and salt over them.

Next, melt small amounts of butter in a tiny saucepan over very low heat; carefully remove any excess fat that forms, known as 'ilky' substance, and discard it. Transfer the remaining butter to a large frying pan and heat over extremely high heat.

Now, sear the venison steaks in the large frying pan for approximately 3 minutes on each side, then decrease the heat to a medium level and cook for around 10 minutes on each side for rare steaks, or 15 minutes on each side for medium-cooked steaks. Remove the venison from the heat and let it rest for 2 to 3 minutes before slicing into long, thin strips. Serve the dish immediately.
