Blackened Prime Rib Roast
Ingredients
  • 1/2 cup brown sugar
  • 2 teaspoons ground cumin
  • 2 tablespoons ground black pepper
  • 2 tablespoons ground coriander
  • 1/4 cup chili powder
  • 2 tablespoons kosher salt
  • 1/4 cup soy sauce
  • 1/2 cup chili powder
  • 3 tablespoons Cajun-style blackened seasoning
  • 6 pounds prime rib roast, bone in
  • 2 cups water

Combine the brown sugar, cumin, black pepper, coriander, and chili powder in a medium-sized bowl. Add the kosher salt and soy sauce to this mixture as well. In another small bowl, combine an additional 1/2 cup of chili powder with the blackened seasoning. Set these two mixtures aside for now.

Cut the ribs from the roast and place them in a roasting pan. The bones will serve as a makeshift rack, allowing the meat to cook evenly. Apply the soy sauce mixture all over the ribs, making sure they're well-coated. Next, sprinkle the Cajun seasoning mixture evenly over the ribs, ensuring they're fully coated. Allow the meat to marinate for at least one hour or wrap it in plastic wrap and refrigerate overnight.

Preheat your oven to 500 degrees Fahrenheit. Remove any plastic wrap from the roast and place it in the preheated oven. Roast the meat uncovered for 15 minutes, allowing it to brown slightly. Pour water into the pan to create a moist environment and reduce the oven temperature to 300 degrees Fahrenheit. Continue roasting for an additional hour and ten minutes, or until the internal temperature reaches 130-140 degrees Fahrenheit (medium rare) or 145-155 degrees Fahrenheit (medium). Once done, let the roast stand for thirty minutes before carving to allow the juices to redistribute.
