  • 1 teaspoon black pepper
  • 1 teaspoon white pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 cup unsalted butter, melted, divided
  • 6 (4 ounce) fillets trout

Combine paprika, dry mustard, cayenne pepper, cumin, black pepper, white pepper, thyme, and salt in a small bowl to create the spice blend.

Preheat a heavy cast iron pan over high heat for approximately 10 minutes, allowing it to reach an extremely hot temperature. During this time, pour 3/4 cup of melted butter into a shallow dish for later use.

Dip each fillet into the melted butter, ensuring it is coated on both sides by gently turning the fish once.

Sprinkle both sides of the fillets with the prepared spice mixture, taking care not to apply too much pressure which could cause the spices to become unevenly distributed.

Working in batches, carefully place each fillet into the hot pan without overcrowding it.

Pour approximately 1 teaspoon of melted butter over each fillet, taking care not to spill any.

Cook the fish until it has developed a nicely charred bottom, approximately 2 minutes.

Flip the fillets over and spoon about 1 teaspoon of melted butter over each.

Continue cooking until the bottoms are nicely charred, taking care to not overcook.
