  • 1 tablespoon ground cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons salt
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 4 salmon fillets, skin and bones removed
  • 1/2 cup unsalted butter, melted

Combine paprika, cayenne pepper, onion powder, salt, white and black pepper, thyme, basil, and oregano in a small bowl to create the spice blend.

Apply an even layer of butter to both sides of salmon fillets and sprinkle them generously with the prepared spice mixture.

Heat 2 tablespoons of melted butter in a large, heavy skillet over high heat. Place the salmon fillets in the skillet and cook until they develop a dark, caramelized crust on both sides, 2 to 5 minutes.

Carefully turn the salmon fillets over and add any remaining melted butter to the skillet. Flip the fillets into the butter, allowing them to cook on the other side until they achieve a similar dark crust and can be easily flaked with a fork, 3 to 5 minutes.
