Blackened Cajun Redfish
Ingredients
  • 1/4 cup butter, melted and cooled
  • 1 teaspoon cayenne pepper
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon lemon-pepper seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 4 (4 ounce) fillets red drum
  • 1 1/4 cups Italian-style salad dressing
Instructions
1
Acquire all necessary ingredients and preheat your oven to the optimal temperature of 350 degrees Fahrenheit (175 degrees Celsius).
2
Prepare a shallow dish by placing melted butter within it. Combine cayenne pepper, black pepper, lemon-pepper seasoning, garlic powder, and salt in a small container. Dip fillets into the melted butter, then sprinkle with the seasoning mixture on both sides.
3
Heat a large skillet over extremely high heat. Add fish and sear until it develops a slight crust, approximately 2 minutes per side.
4
Transfer the fillets to an 11x7-inch baking dish and pour Italian dressing over the top of the fish.
5
Cover the dish and bake in the preheated oven until the fish becomes tender and flakes easily with a fork, approximately 30 minutes.
