- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 4 (4 ounce) catfish fillets, skinned
- 3/4 cup unsalted butter

Combine salt, black pepper, and cayenne pepper with garlic powder, onion powder, paprika, parsley, oregano, and thyme in a shallow bowl until the spices are well blended. Coat catfish fillets evenly with the spice mixture, ensuring they are fully covered.

Heat butter in a separate container and set it aside for later use.

Prepare an outdoor cooking station by arranging a portable heat source, such as a butane burner or the side burner of a gas grill. Light the burner and place a large cast-iron skillet onto it over high heat. Pour approximately 1/4 cup of melted butter into the skillet.

Once the butter in the skillet is extremely hot, add catfish fillets to it. Cook until the spices are nicely caramelized on the fillets and the catfish is opaque and flaky inside, approximately 3 minutes per side. Be cautious when handling the hot skillet.

To serve, pour the remaining 1/2 cup of melted butter over the catfish fillets.
