Blackberry Crumble Bars

  • 3 cups fresh blackberries
  • 1/4 cup white sugar
  • 3 tablespoons cornstarch
  • 1/8 teaspoon kosher salt

  • 3/4 cup uncooked quick-cooking oats
  • 1 cup flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup sliced almonds
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter, melted

Combine blackberries, blackberry preserves, white sugar, cornstarch, and a pinch of kosher salt in a small saucepan.

Heat the mixture on medium-high heat, stirring continuously, until it reaches a boiling point. Lower the heat to medium and continue stirring occasionally for 7 to 10 minutes, ensuring the mixture doesn't form a stubborn layer at the bottom of the pan.

Once the mixture has thickened, remove it from the heat and let it cool down.

Preheat your oven to 350 degrees F (175 degrees C) and line an 8x 8-inch baking pan with a large piece of parchment paper, covering the bottom and sides to create a makeshift sling. Spray the parchment paper and exposed areas of the pan with cooking spray.

In a separate bowl, mix together oats, flour, light brown sugar, sliced almonds, cinnamon, soda, and salt until well combined. Drizzle in melted butter and stir the mixture until the flour and oats are evenly incorporated.

Spread out 2 cups of the crumble mixture onto the prepared pan, using your fingers or the bottom of a measuring cup to firmly press and smooth it out.

Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool for 5 minutes.

Pour the filling over the crust, followed by a sprinkle of remaining crumble mixture evenly over the top. Return the pan to the oven and bake until the top is lightly browned and the filling is bubbly, approximately 40 minutes.

Allow the bars to cool completely in the pan for 1 to 2 hours.

Once the bars have cooled, use the parchment paper to lift them out of the pan. Cut into 9 servings and serve at room temperature. Refrigerate any leftovers.
