- 1 (8 ounce) package yellow rice mix
- 2 tablespoons olive oil
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 (15 ounce) can black beans, rinsed and drained
- 2 teaspoons lime juice
- 1 teaspoon ground cumin

Heat water, rice, and olive oil to a rolling boil in a saucepan over extremely high heat. Gradually decrease the heat to a relatively low temperature, cover the pan with a lid, and continue cooking until the rice is cooked through and all the liquid has been absorbed, taking around 20 to 25 minutes.

Take a large bowl and mix together corn, black beans, the juice of a lime, and cumin. Once this mixture is well combined, add the cooked rice to it and present it as a dish.
