Ingredients
- 1 (15 ounce) can great Northern beans, drained and rinsed
- 3/4 cup diced tomatoes
- 1 clove garlic
- 1/3 cup nutritional yeast
- 1 teaspoon ground cumin
- 1/4 teaspoon chili powder
- salt to taste
- 1 pinch cayenne pepper, or to taste
- 1/2 cup black beans, drained and rinsed
- 1 tablespoon olive oil, or as needed
- 8 whole grain tortillas
- cooking spray
Instructions

Combine cooked Great Northern beans, 3/4 cup of crushed tomatoes, and minced garlic in a food processor until you achieve a smooth consistency.

Mix in nutritional yeast, cumin, chili powder, salt, and cayenne pepper until well combined.

Transfer the bean mixture to a large bowl and stir in black beans. Add the remaining 1/4 cup of crushed tomatoes to the mixture.

Heat olive oil in a large skillet over medium-high heat.

Place a tortilla in the hot oil and spread about 1/4 cup of the bean mixture over it.

Place another tortilla on top of the filling; cook until the filling is warmed through, approximately 10 minutes.

Flip the quesadilla to its other side and spray it with cooking spray.

Cook for an additional 3 to 5 minutes, or until the second side is lightly browned.
