- 18 (3 inch) ready-to-bake pie shells

First, preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius).

To prepare the pecans, place them in a food processor and process until they are roughly chopped.

Meanwhile, combine sugar, eggs, light corn syrup, dark corn syrup, melted butter, vanilla extract, and salt in a bowl. Mix these ingredients until they are well combined; then fold in the chopped pecans.

Next, divide 1/4 cup of the pecan mixture into each mini pie shell. Arrange these pies on a baking sheet.

Finally, bake the pies in the preheated oven until they are lightly browned on top, taking around 25 to 30 minutes. Serve the pies warm or at room temperature and store them in airtight containers for up to one week.
