Ingredients
- 1/2 cup soy sauce (such as Kikkoman®)
- 1/4 cup lime juice
- 3 cloves garlic, smashed
- 2 teaspoons white sugar
- 1 teaspoon fish sauce
- ground black pepper to taste
- 1 pound beef steak, sliced 1/4-inch thick
- 2 tablespoons vegetable oil, divided, or as needed
- 4 potatoes, cut into wedges
- 1 large onion, cut into rings
- 1/8 cup water

Combine soy sauce, lime juice, minced garlic, sugar, fish sauce, and black pepper in a bowl. Sample the mixture and make any necessary adjustments to suit your taste preferences. Add sliced beef, ensuring it is evenly coated with the marinade. Allow it to marinate for at least 30 minutes or up to 1 hour.

Heat 1 tablespoon of oil in a wok or pan over medium-high heat. Sear sliced potatoes in the hot oil until their edges turn golden brown, taking around 7 to 10 minutes. Transfer them to a plate.

Heat the remaining oil in the same pan over medium-high heat and sauté sliced onions until their edges turn brown, also taking around 7 to 10 minutes. Transfer them to the same plate.

Heat the same pan over medium-high heat again. Reserve the marinade and cook the beef in batches, adding more vegetable oil if needed, until it is browned and no longer pink in the centers, taking around 5 to 7 minutes. Transfer it to the plate and continue with the remaining beef.

Pour the reserved marinade into the pan, adding a splash of water to deglaze it and scrape up any browned bits from the bottom of the pan using a wooden spoon. Sample the mixture and make any necessary adjustments to your seasonings. Return the beef back to the pan with some of the sautéed onions, leaving the remaining onions for garnish; reduce heat and let it simmer until the sauce has thickened, taking around 7 to 10 minutes.

Place the beef and its accompanying sauce onto a serving plate. Garnish with the remaining onions. Serve the potatoes on the side and enjoy your meal.
