- 1 (15 ounce) can chili beans, drained
- 1/2 medium onion, chopped
- 1/2 teaspoon minced garlic
- 1 Anaheim chile pepper, chopped
- 1 poblano chile pepper, chopped
- 2 tablespoons chili powder
- 1 teaspoon red pepper flakes
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon cayenne pepper
- salt and ground black pepper to taste

Heat a skillet over medium heat and sear the buffalo until it's nicely browned; sprinkle with 1/2 teaspoon of ground cumin and a pinch of cayenne pepper, adjusting to your desired level of spiciness; remove any excess oil from the pan.

Combine the browned buffalo with a mixture of diced tomatoes, green chiles, tomato soup, kidney beans, chili beans, sautéed onion and garlic, roasted Anaheim chile pepper, smoked poblano chile pepper, chili powder, red pepper flakes, 1 1/2 teaspoons of ground cumin, 1/2 teaspoon of cayenne pepper, salt, and black pepper in a slow cooker; cover the container and let it cook on Low for an extended period, either overnight or 8 hours.
