Birthday Butter Cake
Ingredients
  • 2 cups white sugar
  • 1 cup butter, room temperature
  • 1 teaspoon vanilla extract
  • 4 eggs, separated, room temperature
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 pinch salt
  • 1 cup milk, room temperature
Instructions
1
First, preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius).
2
Next, take three cake pans with diameters of 8 or 9 inches and grease them thoroughly before sprinkling a thin layer of flour inside each pan.
3
Then, combine granulated sugar and unsalted butter in a large mixing bowl using an electric mixer until the mixture becomes smooth, silky, and utterly delightful. This should take around 5 minutes to accomplish.
4
After that, add the egg yolks one at a time, making sure to beat them in thoroughly after each addition.
5
Meanwhile, mix together a pinch of salt, flour, baking powder, and another pinch of salt in a separate bowl.
6
Now, gradually add the flour mixture to the sugar and butter mixture in three batches, alternating with milk and beating the batter briefly after each addition. Don't forget to scrape down the sides and bottom of the bowl as you mix.
7
Next, take a separate bowl and beat the egg whites with an additional pinch of salt until they form stiff peaks.
8
Fold 1/3 of the egg whites into the cake batter to give it a lighter texture, then gently fold in the remaining egg whites.
9
Finally, pour the cake batter into the prepared pans and bake them in the preheated oven until they spring back when lightly touched with your fingertip, and a tester inserted into the centers comes out clean. This should take around 25 minutes to complete.
