Big Soft Molasses Ginger Cookies
Ingredients
  • 2 tablespoons white sugar
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup margarine, softened
  • 1 cup white sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 tablespoon water
Instructions
1
Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit. Meanwhile, place two tablespoons of sugar into a small container and set it aside for now.
2
In another bowl, combine the flour, ground ginger, baking soda, cinnamon powder, ground cloves, and salt in a single motion.
3
Using an electric mixer, cream together the butter and remaining one cup of sugar in a large mixing vessel until it reaches a light and fluffy consistency. Next, incorporate the egg into this mixture, followed by the molasses and water. Gradually blend the sifted ingredients from earlier into this molasses mixture until everything is well combined.
4
Using your hands, shape the dough into 24 small balls that are roughly the size of walnuts. Then, roll each ball in the reserved sugar until it is evenly coated with a layer of sugar.
5
Place these cookies two inches apart on ungreased cookie trays, and use the flat edge of a glass to gently flatten them slightly.
6
Bake these cookies in the preheated oven for 8 to 10 minutes, switching the racks halfway through the baking time.
7
Remove the cookies from the oven and let them cool on the baking sheets for five minutes before transferring them to a wire rack to cool completely.
