Ingredients
- 2 tablespoons vegetable oil
- 2 pounds bottom round beef roast, trimmed and cut into chunks
- 2 cups water
- 3 large carrots, sliced
- 1/2 onion, sliced and chopped
- 2 stalks celery, chopped
- 1 tablespoon Worcestershire sauce
- 2 teaspoons salt
- 2 teaspoons white sugar
- 1 teaspoon ground black pepper
- 1 teaspoon paprika
- 1 clove garlic, pressed
- 2 bay leaves, or more to taste
- 1 pinch ground allspice
- 2 russet potatoes, chopped, or more to taste
Instructions
1
Preheat a large skillet over extremely high heat, filling it with vegetable oil. Sear the beef on all sides until it reaches a rich brown color, approximately 5 minutes.
2
Transfer the beef and oil mixture to a large cooking vessel.
3
Mix together water, carrots, onion, celery, Worcestershire sauce, salt, sugar, pepper, paprika, garlic, bay leaves, and allspice in a bowl. Combine this mixture with the beef, ensuring everything is well-coated.
4
Cover the pot and allow it to simmer over a very low heat setting for 1.5 hours.
5
Add diced potatoes to the stew, cover the pot again, and continue to cook until the potatoes are tender.
