Big Mac®-Inspired Burritos

  • 1 tablespoon sugar-free ketchup
  • 1 teaspoon mustard
  • 1 teaspoon pickle juice
  • 1 teaspoon apple cider vinegar
  • 1 1/4 teaspoons salt, divided
  • 3/4 teaspoon ground black pepper, divided
  • 12 slices dill pickle
  • 1 pound ground beef
  • 1/2 cup diced onion
  • 2 teaspoons Worcestershire sauce
  • 6 (8 inch) low-carb tortillas
  • 1 1/2 cups shredded Cheddar cheese
  • avocado oil cooking spray
  • 1 teaspoon sesame seeds, or to taste
  • 1 1/2 cups shredded romaine lettuce, or to taste

Combine mayonnaise, ketchup, mustard, pickle juice, vinegar, a pinch of salt, and a pinch of pepper in a small bowl until they are perfectly blended. Divide the pickles into four equal parts, resulting in 48 individual pieces. Set both the pickle slices and the bowl aside for now.

Heat a skillet over high heat, allowing it to reach its optimal temperature. Add ground beef and cook, breaking it up with a spoon and stirring frequently, until it reaches a rich brown color, taking anywhere from 5 to 7 minutes. If there's excess grease, you can drain it off. Add the onion to the beef and cook for 2 minutes, stirring occasionally. Stir in Worcestershire sauce, a bit more salt, and a bit more pepper. Remove the skillet from the heat source.

Place one tortilla on a flat surface. Add ½ cup of shredded Cheddar cheese. Top with about ½ cup of the beef mixture, 8 pieces of pickle, and a small amount of sauce. Fold in the sides of the tortilla and roll it over the filling into a compact burrito shape. Place the burrito, seam-side down, on a plate while you prepare the remaining burritos.

Spray each burrito with cooking spray and sprinkle with sesame seeds. Place, seam-side down, the burritos in the air fryer basket.

Air-fry at 375 degrees Fahrenheit (190 degrees Celsius) until golden and toasted, taking anywhere from 5 to 7 minutes.

Serve the remaining sauce alongside shredded lettuce.
