Big Ed's Cajun Shrimp Stew
Ingredients
  • 1 tablespoon butter
  • 1/2 cup chopped green bell pepper
  • 1/4 cup sliced green onions
  • 1 clove garlic, minced
  • 3 cups tomato-vegetable juice cocktail
  • 1 (8 ounce) bottle clam juice
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 1 bay leaf
  • 1/2 cup uncooked long-grain white rice
  • 3/4 pound fresh shrimp, peeled and deveined
  • hot pepper sauce to taste
Instructions

Heat a large pot over medium heat, allowing the butter to melt and become fluid. Next, add sliced bell pepper, chopped onions, and minced garlic; cook until they are soft and tender.

Subsequently, combine vegetable juice, clam juice, water, salt, thyme, basil, red pepper flakes, and bay leaf in the pot; bring the mixture to a rolling boil.

Now, add cooked rice into the pot and then decrease the heat level, cover it with a lid, and let it simmer until the rice is cooked through, approximately 15 minutes.

Following that, add the shrimp to the pot and cook until they turn opaque, roughly 5 minutes.

Finally, remove the bay leaf from the pot and season with hot sauce to serve.
