Ingredients
- 1 quart chicken stock
- 3 small ham hocks
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon crushed red pepper flakes
- 3 tablespoons cider vinegar
- 1/4 teaspoon black pepper
- water
- 1 bunch collard greens - rinsed, trimmed and chopped
- salt to taste
- hot pepper sauce to taste

Start by filling a large container with chicken stock. Next, add ham hocks, an onion, garlic, some red pepper flakes, vinegar, black pepper, and enough liquid to completely submerge the ham hocks. Place the pot on high heat until it reaches a rolling boil; then, decrease the heat and let it simmer for 1 to 2 hours in order to create a rich broth.

Remove the ham hocks from the pot and take out the meat. Combine the pulled meat with collard greens in the broth, then continue to cook until the greens reach your preferred level of tenderness, which can take anywhere from 1 to 5 hours. Finally, season the broth with salt before serving it alongside a side of hot sauce.
