  • 3 cups cake flour, plus more for dusting
  • 1 (8 ounce) package Neufchatel cheese, softened
  • 1 1/2 cups brown sugar
  • 1 1/2 cups sugar
  • 4 eggs, at room temperature
  • 2 1/2 cups sweet potatoes, baked, cooled, and pureed
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

To prepare the pan, lightly spray it with non-stick cooking spray and dust it evenly with all-purpose flour.

In a large mixing bowl, use an electric mixer to cream together softened butter and Neufchâtel cheese until smooth. Gradually add granulated sugar and continue mixing until light and airy.

Add one egg at a time to the mixture, beating thoroughly after each addition. Mix in sweet potato puree until it's fully incorporated.
