Ingredients
- 1 cup cooked brown rice
- 1 cup 2% low-fat milk
- 2 tablespoons dried blueberries
- 1 dash cinnamon
- 1 tablespoon honey
- 1 egg
- 1/4 teaspoon vanilla extract
- 1 tablespoon butter

Combine the cooked brown rice, milk, blueberries, cinnamon, and honey in a small saucepan. Heat it gently over medium heat until the mixture starts to boil, then gradually decrease the temperature to a low simmer and let it cook for 20 minutes.

Gently crack an egg into a small bowl and whisk it until the whites and yolks are fully incorporated. Gradually add some of the hot rice mixture to the egg, stirring constantly and adding about 6 tablespoons at a time until you have fully incorporated the egg into the rice. Combine this with the vanilla and melted butter, then continue cooking over low heat for 1 to 2 minutes, stirring occasionally until the mixture thickens.
