Beetroot Halwa Dessert

  • 2 cups milk
  • 1 cup white sugar
  • 1 tablespoon butter
  • 1/2 cup cashew halves
  • 1/2 cup raisins
  • 1 pinch ground cardamom

Heat a saucepan over an intermediate temperature, then add the carrots and milk. Allow it to reach its boiling point, and continue cooking until most of the milk has evaporated, approximately 10 minutes. Add sugar to the mixture and continue cooking until it reaches a dry consistency. Stir constantly to prevent burning, as this will ensure the mixture doesn't become discolored.

In a separate skillet over an intermediate temperature, melt the butter. Add cashews and raisins to the skillet, then sauté until they turn a golden brown color. Spread this mixture evenly over the carrot mixture. Finish by sprinkling ground cardamom on top for added fragrance and aroma.
