Hearty Roasted Beet Soup with Caramelized Onions and Garlic
Ingredients
  • 3 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 6 medium beets, peeled and chopped
  • 2 cups beef stock
  • salt and freshly ground black pepper to taste
  • 1/4 cup heavy cream, or as needed

Collect all necessary components.

Heat olive oil in a substantial cooking vessel over medium heat. Prepare and stir the onion and garlic within the hot oil until they become soft but not caramelized, approximately 5 minutes.

Introduce beets into the mixture and cook for a minute.

Pour in broth; add salt and pepper to taste. Bring to a boil; cover, decrease heat to medium-low, and simmer until the beets are tender, 20 to 30 minutes. Remove from heat and permit to cool slightly.

Process the soup in short intervals using a food processor until it reaches a uniform consistency. Return to the cooking vessel and cook over low heat until warmed through.
