Ingredients
- 1 (12 fluid ounce) bottle amber beer (such as Honey Brown LagerĀ®)
- 1/4 cup soy sauce
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ground black pepper
- 1 tablespoon salt
- 1 dash hot pepper sauce, or to taste
- 4 (3/4 pound) venison steaks

Combine the ingredients of beer, soy sauce, mustard, Worcestershire sauce, pepper, salt, and hot sauce in a bowl and mix until well incorporated. Transfer the mixture to a resealable plastic bag, then add the venison steaks and coat them evenly with the marinade. Remove any excess air from the bag before sealing it tightly.

Place the marinated venison steaks in the refrigerator for 2 days to allow them to absorb the flavors.

Prepare an outdoor grill for high heat and lightly brush it with oil. Remove the steaks from their marinade, allowing any excess to fall away. Discard the remaining marinade.

Cook the steaks on the preheated grill for 7 minutes per side, or until they begin to firm up and reach a hot, slightly pink center. Use an instant-read thermometer to check the internal temperature of the steaks, aiming for 140 degrees F (60 degrees C). After cooking, let the steaks rest for 5 minutes before serving.
