  • 1 tablespoon white sugar
  • 2 teaspoons kosher salt
  • 1 (.25 ounce) package active dry yeast
  • 4 1/2 cups bread flour
  • 1/4 cup unsalted butter, melted
  • 1 large egg yolk
  • 1 tablespoon water
  • 10 cups water
  • 2/3 cup baking soda
  • 1/4 cup kosher salt, divided - or to taste
  • 18 hot dogs

Begin by heating the beer in a saucepan over low heat until it reaches 110 degrees F (45 degrees C). Next, transfer the beer to a bowl.

Add granulated sugar and 2 teaspoons of kosher salt to the beer mixture; then sprinkle active dry yeast on top. Allow it to stand for 5 minutes, or until the yeast starts to bubble and foam.

In a separate mixing bowl, combine 2 cups of bread flour and softened butter. Add the yeast mixture to this combination; then select the 'Dough' cycle on your bread machine.

Preheat your oven to 450 degrees F (230 degrees C). Lightly grease two baking sheets or line them with parchment paper.

In a small bowl, whisk together an egg yolk and 1 tablespoon of water; set this aside for later use.

In a large pot, combine 10 cups of water and baking soda; stir until the baking soda is fully dissolved. Bring this mixture to a boil.

Remove the dough from the bread machine and roll it out onto a lightly-oiled surface. Roll the dough into a 10x20-inch rectangle.

Cut the dough into eighteen 1-inch wide strips. Wrap each strip tightly around a hot dog in a spiral, pinching the edges to seal and leaving about half an inch of hot dog exposed at each end.

Carefully drop 2 or 3 dough-wrapped hot dogs into the boiling water for 30 seconds.

Arrange the boiled hot dogs on the prepared baking sheets. Brush each pretzel dog with the egg yolk mixture; then sprinkle with remaining 1/4 cup of salt.

Bake in the preheated oven until golden brown, about 15 minutes.
