Ingredients
- 1/8 teaspoon celery seeds
- 1/8 teaspoon caraway seeds
- 1 (12 fluid ounce) can or bottle lager beer
- 1 tablespoon light brown sugar
- 2 teaspoons dry mustard powder
- 1 teaspoon onion powder
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon dried dill weed
- 1 pound fresh bratwurst sausages
- 1 pound sauerkraut (preferably barrel-aged), drained

Grind the celery seeds and caraway seeds into a fine powder using a mortar and pestle.

Combine beer, brown sugar, dry mustard, onion powder, pepper, dill, and the ground seeds in a bowl until the brown sugar is fully incorporated.

Place sausages into a large non-stick pan over medium heat. Pour the beer mixture over the top and bring to a rolling boil. Lower the heat to low, cover, and simmer for 10 minutes.

Lift the lid and increase the heat to medium. Allow the sauce to thicken into a rich, syrupy consistency, approximately 20 minutes. Rotate the sausages in the sauce to ensure they are evenly coated. Transfer the sausages to a plate and cover to keep warm.

Add sauerkraut to the pan and stir to combine with any remaining sauce; cook for 5-8 minutes. Transfer the sauerkraut to a serving platter and top with warm sausages.
