Beef Taco Soup
Ingredients
  • 2 pounds ground beef
  • 1 onion, chopped
  • 1 (10.75 ounce) can tomato puree
  • 1 (15 ounce) can tomato sauce
  • 1 cup water
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (1.25 ounce) package taco seasoning mix
Instructions
1
In a medium-sized cooking vessel, cook the beef and onion over medium-high heat until they are nicely browned, approximately 10 minutes. Remove excess fat if necessary.
2
Add the canned tomatoes, tomato sauce, water, beans, corn, and taco seasoning to the pot. Stir well to combine.
3
Bring the mixture to a rolling boil, then decrease the heat and let it simmer gently for 5 minutes.
4
Finish the dish by sprinkling shredded cheese, crushed corn chips, a dollop of sour cream, and sliced olives on top.
