Ingredients
- 1 1/2 cups prepared dashi stock
- 3/4 cup soy sauce
- 3/4 cup mirin
- 1/4 cup white sugar
- 8 ounces shirataki noodles
- 3 tablespoons canola oil, divided
- 1 pound beef top sirloin, thinly sliced
- 1 medium onion, thinly sliced
- 2 medium carrots, thinly sliced
- 2 stalks celery, thinly sliced
- 4 ounces sliced fresh mushrooms (button, shiitake, or enoki)
- 5 green onions, cut into 2-inch pieces
- 1 (14 ounce) package firm tofu, cut into cubes

Collect all the necessary ingredients and prepare them for use.

In a separate container, whisk together dashi, soy sauce, mirin, and sugar; set it aside for later use.

Submerge the noodles in boiling water for 1 minute, then drain and rinse them under cold running water before draining again.

In a large pan or pot, heat 2 tablespoons of oil over medium heat. Add the beef and cook, stirring occasionally, until it reaches your desired level of doneness, typically 2 to 3 minutes. Transfer the beef to a plate and reserve it for now.

Add an additional 1 tablespoon of oil to the pan, then heat it over medium heat. Add the onion, carrots, celery, and mushrooms to the pan; cook, stirring frequently, until they are tender and have lost their crispiness, about 4 minutes.

Add the whisked dashi mixture to the pan, followed by the cooked noodles, beef, tofu, and green onions. Bring the mixture to a gentle simmer.

Remove the pan from the heat source and ladle the hot sukiyaki mixture into four bowls.
