Beef Stroganoff
Ingredients
  • 1 lb beef sirloin (450 grams)
  • 2 tablespoons all-purpose flour (16 grams)
  • 2 tablespoons butter (28 grams)
  • 1 large onion, sliced
  • 8 oz mushrooms, sliced (225 grams)
  • 1 cup beef broth (240 ml)
  • 1 tablespoon tomato paste (15 ml)
  • 1 cup sour cream (240 ml)
  • 1 tablespoon Dijon mustard (15 ml)
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Slice the beef sirloin into thin strips and lightly coat them with flour.

In a large skillet, melt butter over medium-high heat. Add sliced beef strips and sear for 5 minutes, until browned on all sides. Remove from the skillet and set aside.

In the same skillet, add onion and sliced mushrooms. Sauté for about 10 minutes, until softened.

Stir in beef broth and tomato paste, and bring to a simmer.

Return the beef strips to the skillet, reduce heat to low, and simmer for 10 minutes, allowing the flavors to meld together.

Add sour cream and Dijon mustard, stirring well to combine. Simmer for another 5 minutes, adjusting salt and pepper to taste.
