Ingredients
  • 1/4 cup rice vinegar
  • 3 tablespoons soy sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon peanut oil
  • 1 tablespoon chile-garlic sauce (such as Sriracha®)
  • 1 teaspoon sesame oil
  • 1/4 cup cold water
  • 1 tablespoon cornstarch
  • 1 tablespoon peanut oil
  • 3/4 pound beef flank steak, thinly sliced
  • 2 carrots, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 cup mushrooms, sliced
  • 1 cup broccoli florets
  • 1 bunch green onions, sliced
  • 1 tablespoon minced fresh ginger
  • 2 cloves garlic, minced

Combine the ingredients for the sauce by whisking them together in a medium-sized bowl until they form a uniform mixture. \nPrepare the stir-fry by heating 1 tablespoon of peanut oil in a large skillet over medium-high heat until it reaches the smoking point. \nCook and stir the beef in hot oil until it is browned on all sides, approximately 3 minutes. \nTransfer the beef to a plate lined with paper towels using a slotted spoon.\nAdd an additional 1 tablespoon of peanut oil to the remaining drippings in the skillet and heat it until almost at the smoking point. \nStir-fry a variety of vegetables, including carrots, bell pepper, mushrooms, broccoli, green onions, ginger, and garlic in the hot oil-drippings until they are tender, roughly 4 minutes. \nReturn the beef to the skillet and clear a space in the center of the pan. \nReduce the heat to medium-low and pour the vinegar mixture and cornstarch mixture into the cleared space. \nStir the ingredients together for a few seconds, then combine them with the vegetables and beef. \nCover the skillet and cook until the sauce thickens and coats the beef-vegetable mixture, approximately 5 minutes.
