Beef Rouladen with Sour Cream Gravy
Ingredients
  • 1/4 cup Dijon mustard
  • 8 (4 ounce) pieces round steak, pounded 1/4 inch thick
  • 1/2 cup minced onion
  • 2 teaspoons paprika
  • 2 teaspoons salt
  • 2 teaspoons freshly ground black pepper
  • 8 slices bacon
  • 3 tablespoons canola oil
  • 1 (12 ounce) can beef broth
  • 1 1/4 cups water
  • 2 tablespoons cornstarch
  • 1 cup warm water
  • 1/4 cup sour cream
Instructions
1
Apply a thin layer of mustard to one side of each steak, making sure to cover the entire surface.
2
Next, sprinkle a uniform mixture of onion, paprika, salt, and pepper over the steaks, distributing them evenly.
3
Place a slice of bacon on top of each steak and then roll the steaks into tight, cylindrical shapes. Secure these rolls with toothpicks to maintain their shape during cooking.
4
Heat canola oil in a skillet over medium heat and cook the beef rolls on all sides until they develop a rich brown color.
5
Add broth and water to the skillet, stirring to combine, then bring the mixture to a boil.
6
Once boiling, reduce heat to medium-low and cover the skillet with a lid; let the beef rolls simmer gently until they are tender, approximately 30 minutes.
7
Carefully remove the beef rolls from the skillet and strain the remaining broth mixture, discarding any solids.
8
Return the liquid to the skillet and whisk together cornstarch and 1 cup of water until smooth.
9
Slowly pour the cornstarch mixture into the skillet, stirring constantly to prevent lumps from forming.
10
Continue cooking for 2-3 minutes, or until the sauce has thickened to your liking.
11
Stir in a dollop of sour cream and return the beef rolls to the sauce; serve immediately.
