Ingredients
- 2 potatoes
- salt to taste
- 2 tablespoons olive oil
- 1 onion, minced
- 1 green bell pepper, minced
- 2 teaspoons crushed garlic
- 1 1/2 pounds lean ground beef
- 2 cups dry red wine
- 1 (15 ounce) can tomato sauce
- 2/3 cup pimiento-stuffed green olives, drained and chopped
- 1/2 cup capers, drained
- 1/4 cup golden raisins
- 1 teaspoon ground cumin
- 1 pinch dried oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 teaspoon olive oil
Instructions
1
Begin by submerging the potatoes in a substantial amount of water within a large container, and then add a pinch of salt for flavor.
2
Next, bring the water to a rolling boil and then gradually decrease the heat to a moderate-low setting. Cover the container with a lid, and let the potatoes cook at a gentle simmer for approximately 20 minutes, or until they are tender.
3
Drain the potatoes and set them aside to cool down completely.
4
In a large, heavy-bottomed cooking vessel, heat 2 tablespoons of olive oil over medium heat.
5
Then, add the onion, green bell pepper, and garlic to the hot oil and stir constantly until these vegetables become soft and tender.
6
After that, break the ground beef into smaller pieces and mix it with the onion mixture.
7
Continue to cook and stir until the beef is fully browned, taking around 7-10 minutes.
8
Drain as much excess fat from the mixture as possible to prevent it from becoming too greasy.
9
Mix in the red wine, tomato sauce, olives, capers, golden raisins, cumin, oregano, black pepper, and a pinch of salt into the ground beef mixture.
10
Bring this mixture to a boil, then gradually decrease the heat to a moderate-low setting. Cook at a gentle simmer for 25-30 minutes, or until the wine has significantly reduced.
11
Once the potatoes have cooled down, peel them and cut them into bite-sized chunks.
12
Heat 1 teaspoon of olive oil in a skillet over medium heat.
13
Cook the potato chunks in the hot oil until they are nicely browned, taking around 5 minutes.
14
Finally, gently fold the cooked potatoes into the simmering ground beef mixture.
15
Cook together for an additional 5 minutes, allowing all the flavors to meld together.
