Ingredients
- 1/3 cup vegetable oil
- 3 onions, sliced
- 2 tablespoons Hungarian sweet paprika
- 3 teaspoons salt, divided
- 1/2 teaspoon ground black pepper
- 3 pounds beef stew meat, cut into 1 1/2 inch cubes
- 1 1/2 cups water
- 1 (6 ounce) can tomato paste
- 1 clove garlic, minced

Heat a generous amount of oil in a large cooking vessel or Dutch oven over an intermediate heat setting. Sauté the onions in the oil until they become tender and soft, taking approximately 2 to 4 minutes. Set the cooked onions aside for later use.

In a separate, medium-sized container, mix together paprika, two teaspoons of salt, and pepper. Coat the beef cubes evenly with the spice mixture before adding them to the onion pot. Continue cooking the beef until it is browned on all sides.

Return the cooked onions to the pot, followed by the remaining ingredients: water, tomato paste, garlic, and an additional teaspoon of salt. Bring the mixture to a rolling boil, then gradually decrease the heat to a low simmering setting. Cover the pot and let it cook intermittently until the meat becomes tender, requiring a time span of 1 1/2 to 2 hours.
