Ingredients
- 4 1/2 pounds beef short ribs
- 1 quart water
- 2 onions, chopped
- 1 tablespoon black peppercorns, crushed
- 2 beef bouillon cubes
- 2 potatoes, quartered
- 1 chayote squash, peeled and quartered
- 2 carrots, cut in chunks
- 2 stalks celery, quartered
- salt to taste
- 1/4 head cabbage, cut into wedges

Place the short ribs into a large container with sufficient liquid to cover them completely.

Bring the mixture to a rolling boil over extremely high heat, then maintain this intensity for 5 minutes; at the end of this time, the ribs will not be fully cooked. Discard the used liquid and transfer the short ribs to a separate container.

Return the short ribs to their original pot. Add 1 quart of water, along with sliced onions, whole peppercorns, and bouillon cubes. Stir the ingredients gently to combine. Bring the mixture to a boil, then cover it with a lid and gradually decrease the heat to a low simmer for 1 hour.

During this time, gently skim any excess fat that rises to the surface. Introduce diced potatoes, chayote squash, sliced carrots, and chopped celery into the pot. Cover it again and continue to simmer until the potatoes are tender, approximately 20 minutes.

Add a pinch of salt to taste, then introduce shredded cabbage into the pot. Continue to cook for an additional 5 minutes.
