Beef Lo Mein with Skirt Steak and Vegetables in the Instant Pot
Ingredients
  • 1 (16 ounce) package fresh Chinese egg noodles
  • 1 tablespoon grapeseed oil
  • 2 cloves garlic, minced
  • 10 ounces beef skirt steak, cut into thin strips
  • 1 (8 ounce) package portobello mushrooms, quartered
  • 1 carrot, peeled and sliced diagonally
  • 1 red bell pepper, julienned
  • 1/2 cup snow peas
  • 2 tablespoons hoisin sauce
  • 2 tablespoons oyster sauce
  • 2 teaspoons liquid aminos
  • 1 tablespoon chopped green onion, or to taste

Begin by filling a large saucepan with water and placing it on the stovetop to reach its boiling point. Next, add your chosen type of noodles and cook them for approximately 5 minutes. Remove the saucepan from the heat, drain the water, and keep the noodles warm.

Now, press the 'Saute' button on your electric pressure cooker. Add a small amount of oil and minced garlic to the pot, then sauté for 30 seconds. Add your steak strips to the pot and continue to cook them until they start to develop a brown color, taking around 5 minutes.

Remove the steak from the pot and set it aside to keep warm. Add half a cup of water to the pot, then insert the steamer basket and add sliced mushrooms, carrots, bell peppers, and snow peas. Steam these vegetables for about 5 minutes.

While the pressure is still building up, prepare your sauce by mixing together hoisin sauce, oyster sauce, and liquid aminos in a bowl.

Once the pressure has been released using the quick-release method, as instructed by the manufacturer, wait for about 5 minutes. In the meantime, combine your cooked noodles, steak, and steamed vegetables in a large serving dish. Pour the prepared sauce over them and garnish with chopped green onion.
