Ingredients
- 3 tablespoons vegetable oil, divided
- 1 onion, diced
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger root
- 2 tablespoons tomato paste
- 1 teaspoon cayenne powder
- 3 large tomatoes, diced
- 3/4 cup water
- salt and ground black pepper to taste
- 1 pound beef stew meat, cut into bite-size chunks
- 4 cups jasmine rice

Preheat a large cooking vessel over medium heat.

Melt 2 tablespoons of oil in the pot, then add a mixture of onion, garlic, and ginger. Continue to cook and stir until these ingredients are tender, approximately 5 minutes.

Introduce tomato paste and cayenne pepper into the mixture; cook, stirring constantly, until it reaches a dark and rich consistency, around 2 minutes.

Combine the cooked ingredients with tomatoes, 3/4 cup of water, salt, and pepper. Cover the pot and let it simmer over medium-low heat.

Meanwhile, prepare another cooking vessel by heating the remaining 1 tablespoon of oil.

Season stew meat with salt and pepper, then add it to the new pot and cook until browned on both sides, taking about 1 to 2 minutes per side.

Combine the cooked meat into the simmering tomato mixture. Add jasmine rice and pour in enough water to cover it completely. Cover the pot again and cook over medium heat, stirring occasionally, until both meat and rice are tender, approximately 30 minutes.
