- 1 onion, diced
- 2 (4 ounce) cans fire-roasted diced green chiles
- 1/2 green bell pepper, diced
- 1 (15 ounce) can black beans, rinsed and drained
- 8 low-carb high-fiber tortillas (such as La Tortilla Factory®)
- 1 (8 ounce) package shredded low-fat Mexican cheese blend

Begin by heating a generous amount of vegetable oil in a medium-sized saucepan over a moderate heat setting. Next, add the flour and cook continuously using a wooden spoon until it forms a smooth, even consistency, taking approximately 1 to 2 minutes.

Now, incorporate the chili powder into the mixture and continue cooking until it releases a pleasant aroma, roughly 30 seconds later.

Then, combine the chicken stock, tomato paste, oregano, cumin, and salt in the saucepan. Bring the mixture to a rolling boil before reducing the heat and allowing it to simmer until it reaches the desired thickness, approximately 15 minutes.
