Beef Enchiladas with Black Beans and Homemade Sauce
Ingredients
  • 3/4 cup red wine
  • 1/4 cup water
  • 10 cloves garlic, chopped
  • 1 tablespoon chile paste
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon salt
  • 6 (4 ounce) beef tenderloin steaks
  • 1/3 cup vegetable oil
Instructions
1
Combine the ingredients in a medium-sized bowl, mixing them together until well combined. This includes red wine, water, minced garlic, chile paste, white pepper, and salt. Add the beef to this mixture, ensuring it is evenly coated with the marinade.
2
Heat a large and heavy skillet over medium heat. Fry 3 steaks for 2 minutes on each side, setting them aside once done and discarding the excess marinade. Repeat this process with the remaining beef.
3
Pour some oil into the skillet, then lower the heat to medium-low. Fry the steaks for a second time, 2 minutes on each side. Remove any excess oil from the skillet and return all the steaks, along with their marinade, to the pan. Allow everything to simmer for 2 minutes
