- 1 (1 ounce) packet taco seasoning mix
- 1/2 cup chopped sweet onion
- 4 green onions, or to taste, chopped
- 1 (8 ounce) package cream cheese, softened
- 1 cup chunky salsa
- 12 corn tortillas, warmed
- 1 cup shredded pepper Jack cheese
- 2 1/2 cups enchilada sauce
- 1 (4 ounce) can sliced black olives, drained

Preheat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).

In a large, non-stick pan, heat it up to a high flame. Cook the ground beef in the hot pan until it's nicely browned and crumbly, taking around 5 to 7 minutes. Mix in the seasoning blend until well combined. Transfer the beef mixture to a large bowl, leaving the remaining drippings in the pan.

Add sweet and green onions to the leftover pan drippings; cook them over medium heat until they're tender, taking around 5 to 7 minutes.

Add the onions to the beef mixture along with cream cheese and salsa; stir until the cream cheese is fully melted.

Arrange a stack of tortillas on a flat surface. Divide the beef mixture evenly among the tortillas, spooning it in a line down the center of each one. Sprinkle about 1 tablespoon of pepper Jack cheese onto each tortilla, then roll the tortilla up over the filling. Transfer them to a baking dish.

Pour enchilada sauce evenly over the rolled tortillas, then sprinkle olives and remaining cheese on top.

Bake the prepared enchiladas in your preheated oven until the cheese melts completely, taking around 20 minutes.
