Beef Empanadas with a Savory Olive and Raisin Filling
Ingredients
  • 1 tablespoon olive oil, or to taste
  • 1 medium sweet onion, diced
  • 1 tablespoon minced garlic, or more to taste
  • 1 1/2 pounds ground beef
  • 1 pinch ground paprika, or to taste
  • salt and ground black pepper to taste
  • 2 large hard-cooked eggs, chopped
  • 2 large egg yolks, beaten
  • 1/2 cup pimiento-stuffed green olives, chopped
  • 1/2 cup raisins
  • 1 sprig fresh parsley
  • 20 pieces empanada pastry discs
Instructions
1
First, preheat your oven to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius).
2
Next, heat some olive oil in a large skillet over the middle to high heat setting. Sear sliced onions and minced garlic in the hot oil until they become soft and fragrant, approximately 5 minutes. Add ground beef, a pinch of paprika, salt, and pepper; cook and stir constantly until the mixture is browned and crumbly, around 5 to 7 minutes. Transfer the cooked mixture to a separate mixing container.
3
Then, combine diced hard-boiled eggs, pitted olives, sweet raisins, and chopped parsley into the meat mixture.
4
After that, take a small amount of the ground beef mixture and place it in the center of each dough circle. Fold the dough over, pressing the edges together to form a seal using your fingers or a fork, leaving an opening in the dough. Brush the outside of each empanada with a beaten egg yolk using a brush, and position them on a flat baking sheet.
5
Finally, bake the empanadas in the preheated oven until they are lightly browned on top, around 24 to 28 minutes. Allow them to cool for at least 15 minutes before serving.
