Beef Burritos with Roast Meat

  • 1 onion, chopped
  • 1 clove garlic, minced
  • 4 tomatoes, chopped
  • 2 cups chopped cooked roast beef
  • 1 (8 ounce) jar prepared taco sauce
  • 1 (4 ounce) can diced green chile peppers
  • 1/2 teaspoon cumin
  • 1/8 teaspoon red pepper flakes, or to taste
  • 6 (7 inch) flour tortillas, warmed
  • 1 1/2 cups shredded Cheddar cheese
  • 2 cups shredded lettuce

Preheat the skillet by placing it over medium-high heat. Introduce the oil into the pan and allow it to warm up. Next, add the onion and garlic to the skillet and stir until they become soft and translucent, taking around 5 minutes. Introduce the tomatoes, roast beef, taco sauce, chile peppers, cumin, and red pepper flakes to the pan if desired. Bring the mixture to a rolling boil. Lower the heat to medium and let it simmer, uncovered, for 25 minutes or until it reaches a thickened consistency.

Prepare the tortillas by laying them flat on a clean, smooth surface. Distribute approximately 2/3 cup of the beef mixture in the center of each warm tortilla. Sprinkle an even layer of cheese and lettuce over the beef mixture. Fold the ends and sides of each tortilla to create a neat package.
