Beef Burritos in Instant Pot
Ingredients
  • 1 pound 85% lean ground beef
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • 1 cup uncooked long grain rice
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (14.5 ounce) can fire-roasted diced tomatoes, drained
  • 1 (14.5 ounce) can vegetable broth
  • 2 (1 ounce) packets taco seasoning
  • 1/4 cup chopped cilantro, or to taste
  • 8 (10 inch) burrito-size tortillas, or as needed
  • 2 cups shredded Mexican cheese blend
  • 2 tomatoes, diced, or more to taste
  • 1 avocado, diced, or more to taste
  • 1/4 cup sour cream, or to taste
  • 2 green onions, chopped, or to taste

Start the pressure cooker by turning it on and selecting the Saute function, if available. Choose the "more" option to expand the cooking options. Add ground beef, salt, and pepper to the pot, then cook and stir constantly until the meat is browned and crumbly, taking about 5 to 7 minutes. Add an onion to the pot and continue cooking until it begins to soften, adding another 1 to 3 minutes. Next, add olive oil and rice to the pot, then cook and stir until some of the grains start to turn golden brown, approximately 2 minutes. Stir in canned beans, diced tomatoes, broth, and taco seasoning to combine the flavors.

Close and lock the lid securely. According to the manufacturer's instructions, select a high pressure setting and set the timer for 7 minutes. Allow about 10 to 15 minutes for the pressure to build up.

Release the pressure slowly and carefully using the quick-release method, as instructed by the manufacturer. This should take around 5 minutes. Once the pressure has been released, unlock and remove the lid from the pot.

Use a fork to fluff up the burrito bowl filling, then add some chopped cilantro on top. Serve the filling in warm tortillas with a blend of Mexican cheese, and garnish with fresh tomatoes, sliced avocado, sour cream, and green onions.
