Beef Bourguignon Stew
Ingredients
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 pounds cubed stew meat
  • 4 tablespoons butter
  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 clove garlic, minced
  • 2 cups red wine
  • 1 bay leaf
  • 3 tablespoons chopped fresh parsley
  • 1/2 teaspoon dried thyme
  • 1 (6 ounce) can sliced mushrooms
  • 1 (16 ounce) can canned onions

Mix the flour, salt, and ground black pepper in a small bowl to create a seasoning blend.

Dust the beef cubes with this mixture, ensuring they are evenly coated.

Heat a generous amount of butter or margarine in a large skillet over a moderately high heat setting.

Sear the meat until it is nicely browned on all sides, then transfer the mixture to a 2 quart casserole dish.

Place the skillet back on the heat source and add the sliced onion, chopped carrots, and minced garlic to it.

Sauté these ingredients for 5 to 10 minutes, or until the onion becomes tender and soft.

Add a splash of wine, a bay leaf, some chopped parsley, thyme sprigs, and the liquid from sautéed mushrooms to the skillet.

Pour this mixture over the meat in the casserole dish.

Bake the dish, covered with a lid, at 350 degrees F (175 degrees C) for 2 1/2 hours.

Remove the lid and add canned onions and mushroom crowns to the dish. Continue baking for an additional 30 minutes.
